08/04/2015: UK learning disabilities college project rears, smokes and sells organic brown trout

Stroudco Food Hub is very pleased to offer organically hand-reared trout from the beautiful ponds at Ruskin Mill College Fish Farm, near Horsley, UK, Stroud Life reports.

The ponds are fed by natural springs emerging from the Horsley valley slopes. These brown trout are reared using organically-certified food and welfare standards.

Brown trout are generally considered more flavoursome than their cousins, the more colourful rainbow trout, being closer to the wild state.

Stroudco shopper Carol Mathews said: "I had always found trout to be a bit bland, but now realise that most of the trout we buy are rainbow trout and these brown trout have a much fuller, richer flavour. I am a convert!"

Since the advent of the Smokery at Ruskin Mill, Stroudco has also been able to offer smoked trout fillets which have proved very popular.

The Smokery provides valuable work experience to the Ruskin Mill students who are young people with autism and learning disabilities who also work on the fish farm so can see the process from beginning to end.

This follows the Ruskin Mill College philosophy of helping the students learn by exploring the world by using their hands instead of a textbook.
